Ingredients

  • 2x 25g Nourishing Bubs Pumpkin cubes, defrosted
  • 2x 25g Nourishing Bubs Sweet Potato cubes, defrosted
  • ¼ cup extra virgin olive oil
  • 2 eggs
  • ½ cup cottage cheese
  • 1 cup wholemeal flour
  • ½ tsp baking powder
  • ½ tbsp flat leaf parsley, chopped

Directions

  1. Preheat oven to 180°C and grease or line a muffin tray.
  2. Stir together pumpkin and sweet potato purees, oil, eggs and cottage cheese until all combined.
  3. Fold through flour and baking powder, before stirring through parsley.
  4. Evenly spoon out mixture into 6 muffin tins and bake for 12-15 mins until skewer comes out clean when inserted in the middle.
