This lunchbox is thoughtfully balanced, colourful and flexible, easy to adapt with your little one’s favourite fruits, veggies or dips. Most importantly, it’s designed to help toddlers feel confident, nourished and happy as they explore food independently, one bite at a time.
For beef burrito: Makes one full burrito
1 x corn wrap (or wholemeal wrap)
1 mashed avocado
1/8 cup cooked brown rice
1/8 cup cooked black beans
3 tbsp shredded cheese
A handful of baby spinach
For hummus:
1 cup of cooked chickpeas
¼ cup plain Greek yoghurt
1 tbsp lemon juice
½ tsp minced garlic
½ tsp cumin
½ tbsp olive oil
For snacks:
Freshly sliced strawberries
Seedless watermelon in bite-sized pieces
Thin half-moon cucumber slices
Preheat the oven to 180°C and line a baking tray with a baking sheet.
Bake beef meatballs and quinoa veggie bites in the oven for 10 mins.
To make the beef burrito, spread the mashed avocado on the wrap and assemble with mashed meatballs, brown rice, black beans, cheese and baby spinach. Toast wrap on sandwich press to melt the cheese.Tip: Use avocado to seal the edges and and hold the wrap together.
Microwave legume cube for 30 seconds.
To make the hummus, place the legume, cooked chickpeas, Greek yoghurt, lemon juice, minced garlic, cumin and olive oil in a food processor and process until smooth.
Assemble lunchbox with beef burrito, hummus, quinoa veggie bites, strawberries, watermelon and cucumber.
