This High-Iron Beef & Legume Lasagne is a hearty, nourishing family meal that makes it easy to give bub plenty of iron while enjoying the same delicious meal together. Packed with beef, a variety of legumes, vegetables and creamy cheese, it’s a comforting dish full of flavour, iron, protein, zinc, fibre and essential nutrients to support growing little bodies.
Beef is an excellent source of haem iron, the form of iron that is readily absorbed by the body. Iron is particularly important during bub’s early years to support healthy brain development, learning and the production of healthy red blood cells. Beef also provides high-quality protein, zinc and vitamin B12, which support healthy growth, immune function and energy production.

These ingredients provide plant-based protein, fibre, iron and folate to support growth, healthy digestion, energy and brain development. Pairing these plant-based sources of iron with vitamin C-rich foods, such as tomatoes, carrots, mushrooms and lemon juice, helps bub absorb more iron from the legumes.

With layers of comforting flavours and a soft texture, this lasagne is a wonderful way to include more iron-rich meals for the whole family. It can also be prepared in advance and frozen, making it a perfect option for busy family nights.

Ingredients
1 tbsp extra-virgin olive oil
1 onion, finely chopped
2 tsp minced garlic
5 mushrooms, finely chopped
500g minced beef
2 tbsp tomato paste
400g crushed tomatoes
1 tbsp ground oregano
1 ⅓ cups cottage cheese, pureed
1 ½ cup grated cheddar cheese
¼ cup grated parmesan cheese
Finely shredded lettuce
Splash of lemon juice and extra virgin olive oil
Directions
Heat olive oil in a large saucepan over medium heat and sauté onions until they become transparent.
Add in garlic and mushrooms and sauté on low heat.
Add in beef and cook, breaking it up as you go.
Once beef is cooked, add in tomato paste, crushed tomatoes and oregano.
Bring to a boil, then reduce the heat and simmer for around 30 minutes, stirring occasionally.
Add the carrot and legume puree cubes until defrosted.
Preheat the oven to 180℃.
To a baking dish, add a layer of the beef mixture and follow this with a single layer of lasagne sheets, snapping the sheets to fit. Repeat the process until you’ve almost used up all the beef mixture.
For the last layer, add a layer of the beef mixture followed by a cottage cheese layer and top off with shredded cheddar and parmesan cheese.
Bake for 30-40 mins, until fully heated and crispy on top.
