This Pea, Broccoli & Mushroom Risotto is a creamy, comforting family meal that makes it easy to serve the same delicious dish to bub and the rest of the family. Packed with vegetables and finished with parmesan and butter, this risotto has a soft, stodgy texture that’s perfect for little hands to scoop and explore as bub becomes more confident with self-feeding.
Peas provide fibre, plant-based protein and folate which support bub’s digestion and rapid growth and development. Broccoli adds even more fibre and vitamin C to support bub’s growing immune system.
Mushrooms contribute fibre and minerals such as potassium and selenium which keeps little hearts and hormones working well. Arborio rice provides carbohydrates to fuel bub’s busy, growing body and support steady energy. Parmesan cheese adds protein and calcium to the meal, with calcium playing an important role in building strong bones and teeth.

With a deliciously creamy texture and plenty of vegetables blended throughout, this risotto is a wonderful way to introduce bub to a variety of flavours while enjoying a nutritious meal together as a family. Simply set aside bub’s portion, then season with salt and pepper for the rest of the family.

Ingredients
1 tbsp extra virgin olive oil
1 onion, finely chopped
2 tsp minced garlic
2 cups mushrooms, finely chopped
1 ¼ cup arborio rice
1 tsp dried oregano
4 cups boiling water
½ cup grated parmesan cheese
25g unsalted butter
Pepper and salt to taste for adult portions
Optional: Thin half-moon cucumber slices
Directions
To a pot on medium heat, add the olive oil and chopped onion and sauté for approximately 10 minutes or until the onion is translucent and soft.
Add the minced garlic and cook for 1 minute.
Add the chopped mushroom and continue to cook for a further 5 minutes.
Add in the rice, oregano and a cup of water. Stir until the liquid has been absorbed, then add another cup until you've used all the water. This will take approximately 15-20 minutes.
Stir in parmesan cheese, unsalted butter, pea and broccoli puree cubes and cook until purees have defrosted.
Take out bub’s portion and then for the rest of the family, season with pepper and salt to taste.
Optional: Serve with fresh thin half-moon cucumber slices on the side.
