Ingredients
- ¼ red capsicum, removed seeds and pith
- ¼ onion, chopped
- extra virgin olive oil to drizzle on capsicum and onion
- 3 x Beef Meatballs Finger Food
- 2 x Chickpea Herby Bites Finger Food
- 1/2 avocado
- ¼ tsp garlic powder
- juice of ½ lemon
Directions
- Preheat the oven to 180°C and line a baking tray with a baking sheet.
- Drizzle olive oil on top of the capsicum and onion and place in the oven along with the beef meatballs and chickpea herby bites and bake for 10 mins. Leave the capsicum and onion on for an additional 25-30 minutes, turning occasionally.
- Place the cooked capsicum in a container, close and wait for it to cool off. This will make it easy for you to then remove the skin.
- Cut the capsicum into bite-sized pieces.
- Dice the onion.
- To make the guacamole, combine the onion, avocado, garlic powder and lemon juice. Mash with a fork and mix well.
- Assemble plate with beef meatballs, chickpea herby bites, roasted capsicum and guacamole.
