Fluffy pancake muffins swirled with nourishing fruit purees make a healthy, delicious treat for toddlers, packed with natural sweetness and nutritious ingredients.
2 overripe bananas
1 egg
¾ cup milk
1 tsp vanilla essence
¾ cup wholemeal flour
1x 25g Nourishing Bubs Apple cube, defrosted
1x 25g Nourishing Bubs Strawberry cube, defrosted
1x 25g Nourishing Bubs Pear cube, defrosted
1x 25g Nourishing Bubs Plum cube, defrosted
Preheat the oven to 180°C and grease a mini muffin tray.
In a bowl, mash the bananas. Add the eggs, milk and vanilla essence, and whisk together. Add the flour and whisk until well combined.
Pour 2 tablespoons of mixture into each muffin tin. To each muffin, add a teaspoon of defrosted Nourishing Bubs fruit puree and stir together with a toothpick.
Bake for 18-20 mins until golden and cooked through (test by inserting a toothpick in the middle).
Allow to cool on a wired rack.
makes 15 mini muffins.
