A delicious way to get your little one eating omega-3 rich Mackeral. Make a batch and keep in the freezer! Your little one will love the taste of the sweet potato and potato, coupled with the fish, dill and lemon.

Ingredients
- 1 x 120g tin Mackeral
- ½ cup mashed potato, cold
- 2-3 x 25g Nourishing Bubs Sweet Potato cubes, defrosted
- 1 tbsp finely chopped spring onions / diced onion
- 1 tbsp finely chopped dill, optional
- 1 tsp lemon rind
- Juice of ½ lemon
- ½ cup wholemeal flour
- 1 egg, lightly beaten
- ½ cup breadcrumbs
Directions
- Flake mackeral in a bowl and add mashed potato, sweet potato puree, spring onion, lemon rind and lemon juice. You may like to add a little S&P too (for over 1 year olds).
- Mix to combine then shape heaped teaspoons of mixture into balls and flatten slightly (should be slightly larger than a 50c piece (if you remember what they look like).
- Dip in flour and shake of extra, then dip into egg mixture, then finally into crumbs, ensuring the whole cake is covered.
- Place on baking paper line tray which has been sprayed with olive oil spray. Spray top of cakes with olive oil spray as well.
- Bake for 15 minutes or until golden brown. Serve or freeze, once cooled.
