Caramel Apple Pecan Cupcakes

Ingredients
- 8 dates, pitted
- 3 x 25g Nourishing Bubs Apple Puree Cubes
- 1 egg
- 1 tsp baking soda
- 1 1/2 cups of flour (e.g. wheat flour, almond flour, oat flour etc)
- 1 x 30g sachet of Nourishing Bubs Pecan Meal (leave a little for icing)
- Natural yoghurt and a sprinkle of pecan powder, for icing (optional)
Directions
- Preheat the oven to 180°C.
- Soak dates for 15 mins in warm water to soften them.
- Microwave apple cubes in 30 seconds increments.
- Beat egg.
- In a food processor, add dates, apple, egg, baking soda, flour and pecan meal and process all ingredients until dates are smooth.
- Place mixture into cupcake baking moulds and bake for 8-10 minutes, until edges are light brown.
- Cool 5mins on a wire rack.
- Frost cupcakes with yogurt and sprinkle with pecan meal.
