Chewy Coconut & Apricot Muesli Bars

This delicious Muesli Bar recipe tastes just like a store bought version, only better. The use of chia seeds gives these bars a boost of omega 3s, which amongst other benefits are great for brain health. Dried apricots also provide a boost of iron, which is an essential nutrient involved in normal growth and development, as well as immune functioning and energy conversion. 

These bars are suitable for infants aged 12 months and older, but will likely become a household favourite for all ages.

Ingredients

  • 1 1/2 cups traditional rolled oats, pulsed in food processor until smaller particle size
  • ½ cup pepitas, chopped or processed
  • 1 cup shredded or desiccated coconut
  • 1 cup dried apricots, finely sliced
  • 1/4 cup coconut oil
  • 4 x 25g Nourishing Bubs Apple or Pear or Plum Puree (you can increase to 8 Fruit cubes and ditch the honey if you want a little less sweet)
  • 1/4 - 1/3 cup honey (depending on how sweet you would like it)
  • 2 tbsp chia seeds

Directions

  1. Grease and line regular slab/slice tin with baking paper. Preheat oven to 150°C.
  2. Combine Chia seeds with 1 cup of water and whisk. Leave for 15 minutes, stirring occasionally, until gel is formed and even consistency is reached. Set aside.
  3. Combine all dry ingredients.
  4. Heat Nourishing Bubs puree cubes, honey and coconut oil in a pan until melted. Add puree mixture and chia gel to dry ingredients. Mix until well combined.
  5. Press mixture into tin and cook for 45 minutes - 1 hour in oven or until darker brown colour. Allow to cool in tin then cut into muesli bars. Store in refrigerator.
