A super simple yet absolutely delicious pancake recipe suitable for pancake connoisseurs of all ages! The Nourishing Bubs Beet cubes give these pancakes a gorgeous pink hue plus a nice boost of antioxidants!

10 Small Pancakes
2 x 25g Nourishing Bubs Beetroot Cubes, defrosted
1 egg, lightly beaten
1 x Banana, peeled
2 tbsp wholemeal self-raising flour
Butter or Coconut Oil, for cooking
Mash banana well and mix in egg, defrosted beetroot cubes and flour. Alternatively place all ingredients (except butter/coconut oil) in a blender and blend to combine.
Heat a medium saucepan over low-medium heat. Add a heaped tablespoon of mixture into the pan, repeating around the sides of the pan until you have 4 or 5 little pancakes (depending what your pan can hold).
Cook for 1-2 minutes each side. Repeat with remaining mixture.
Mixture should be pourable, if you find it is a little thick you can add a little milk or water to thin out. If too thin, add a little more flour.
