Ingredients
- 1x 25g Nourishing Bubs broccoli cube, defrosted
- 1x 25g Nourishing Bubs zucchini cube, defrosted
- 1x 25g Nourishing Bubs cauliflower cube, defrosted
- 2 small mushrooms, grated
- ½ cup shredded mozzarella/tasty cheese
- 1 egg
- ½ cup extra virgin olive oil
- ¾ cup milk
- 1 cup wholemeal flour
- ¼ tsp baking powder
Directions
- Preheat the oven to 180°C and line or grease a muffin tray.
- Combine all wet ingredients together, then stir through dry ingredients to combine.
- Scoop 1½ tablespoons of mixture into each muffin tin and sprinkle a little extra shredded cheese on top.
- Bake for ~20 minutes until golden and cooked through. Let cool for 10 mins on a wire rack.
