Ingredients
- 200g firm tofu
- 95g canned salmon, bones removed
- 1x 25g Nourishing Bubs Broccoli cube, defrosted
- 1x 25g Nourishing Bubs Parsnip cube, defrosted
- ½ carrot, grated
- ¼ cup breadcrumbs
- 2 eggs
- Drizzle of Extra virgin olive oil, for cooking
Directions
- Wrap the tofu in a paper towel and press to remove any moisture. Drain the salmon.
- Using your hands, crumble the tofu into small pieces and place in a bowl with all other ingredients (besides oil). Stir until it forms a thick mixture that binds well.
- Heat a medium sized pan over medium heat. Drizzle with olive oil.
- Use a tablespoon of mixture to create each fritter. Cook for roughly 90 seconds on each side, pressing down when you flip to create a flat fritter shape.
- Repeat with remaining mixture.
