These Tofu, Salmon & Veggie Fritters are a nutritious and delicious finger food, packed with protein and vitamins to support your baby's growth and development.

Ingredients

  • 200g firm tofu
  • 95g canned salmon, bones removed
  • 1x 25g Nourishing Bubs Broccoli cube, defrosted
  • 1x 25g Nourishing Bubs Parsnip cube, defrosted
  • ½ carrot, grated
  • ¼ cup breadcrumbs
  • 2 eggs
  • Drizzle of Extra virgin olive oil, for cooking

Directions

  1. Wrap the tofu in a paper towel and press to remove any moisture. Drain the salmon.
  2. Using your hands, crumble the tofu into small pieces and place in a bowl with all other ingredients (besides oil). Stir until it forms a thick mixture that binds well.
  3. Heat a medium sized pan over medium heat. Drizzle with olive oil.
  4. Use a tablespoon of mixture to create each fritter. Cook for roughly 90 seconds on each side, pressing down when you flip to create a flat fritter shape.
  5. Repeat with remaining mixture.
