These soft and delicious muesli cookies are made with the goodness of rolled oats combined with juicy sultanas and apricots (although any fruit could be substituted). They are gently sweetened with our Apple and Pear puree and a dash of honey. They provide a nourishing snack filled with slow releasing energy, making them perfect for active little people and a great addition to the lunchbox.

Ingredients
- 4 x Nourishing Bubs Apple Puree cubes, melted
- 4 x Nourishing Bubs Pear Puree cubes (or Plum cubes), melted
- 2 cups traditional rolled oats
- 3 tbsp honey or maple syrup
- 1/2 cup desiccated coconut
- 1/3 cup coconut oil, melted
- 1/2 cup sultanas
- 1/2 cup dried apricots, finely chopped
- 1 tsp vanilla extract
Directions
- Preheat oven to 160°C. Line baking tray with baking paper.
- Combine all dry ingredients in a bowl.
- Add melted Nourishing Bubs puree, honey, vanilla extract and melted coconut oil. Mix to combine.
- Squeeze tablespoons of mixture together in your hands. Place on tray and flatten slightly. Bake for 30 minutes or until golden and holding together.
