These Carrot & Date Cake Pops are a fun, wholesome snack that feels like a treat while still packing in plenty of nourishing ingredients. Naturally sweetened with dates and made with real carrot puree, these soft and creamy cake pops are perfect for toddlers who love getting involved at snack time. Coated in Greek yoghurt and coconut, they offer a delicious combination of flavours and textures that little ones will love exploring.

Carrots are rich in beta-carotene, which the body converts into vitamin A to support healthy vision and immune function. Dates provide natural sweetness along with fibre, helping to support healthy digestion and making these cake pops sweet without the need for added sugars. Oats contribute fibre and slow-release carbohydrates, providing lasting energy for busy and active little toddlers.

The cashew meal adds healthy fats and plant-based protein to support healthy growth and development. Greek yoghurt provides calcium and protein to help build strong bones, teeth and muscles, while also contributing a creamy texture that pairs perfectly with the naturally sweet cake centre. Ingredients

  • 5-6 dates, pitted
  • 2 x 25g Nourishing Bubs Carrot Puree Cubes
  • 1 x 30g Cashew Meal Sachet from Nourishing Bubs Allergen Intro Pack
  • ⅓ cup oats
  • 1 tsp cinnamon
  • 1 tsp vanilla extract (no alcohol)
  • ½ cup plain Greek yoghurt 
  • Shredded coconut

Directions

  1. Soak dates for 15 mins in warm water to soften them.
  2. Microwave carrot puree cubes in 30 second increments.
  3. In a food processor, add dates, carrot puree, cashew meal, oats, cinnamon and vanilla extract and process all ingredients until smooth. 
  4. Chill the mixture in the fridge for 15 minutes. This will make it easier to handle.
  5. Roll the mixture into bite-sized portions.
  6. Insert a popsicle stick into each ball.
  7. Roll balls into a bowl of yoghurt and sprinkle with shredded coconut.
  8. Place in the freezer for at least 45 minutes to set.
