Ingredients
- 5-6 dates, pitted
- 2 x 25g Nourishing Bubs Carrot Puree Cubes
- 1 x 30g Cashew Meal Sachet from Nourishing Bubs Allergen Intro Pack
- ⅓ cup oats
- 1 tsp cinnamon
- 1 tsp vanilla extract (no alcohol)
- ½ cup plain Greek yoghurt
- Shredded coconut
Directions
- Soak dates for 15 mins in warm water to soften them.
- Microwave carrot puree cubes in 30 second increments.
- In a food processor, add dates, carrot puree, cashew meal, oats, cinnamon and vanilla extract and process all ingredients until smooth.
- Chill the mixture in the fridge for 15 minutes. This will make it easier to handle.
- Roll the mixture into bite-sized portions.
- Insert a popsicle stick into each ball.
- Roll balls into a bowl of yoghurt and sprinkle with shredded coconut.
- Place in the freezer for at least 45 minutes to set.
