With the perfect duo of protein and antioxidants, this colourful lunchbox helps keep little tummies satisfied and provides lasting energy for busy school days. The variety of colours, flavours and textures also encourages little ones to explore new foods and build positive eating habits from an early age.

Ingredients

1 thin-style puffed brown rice cake cut in half (no added salt)
Large, ripe and soft whole strawberries with stem
1/2 cucumber

2/3 cup Greek plain yoghurt
1 tsp vanilla extract (no alcohol)
Directions
Preheat the oven to 180°C and line a baking tray with a baking sheet.
Bake lamb koftas and beets & raspberry muffins in the oven for 10 mins.
Cut cucumber in thin half-moons. Leaving the skin on allows the cucumber to hold its shape and makes it less slippery for bub.
To make the blueberry yoghurt dip, microwave blueberry puree cube in 30 second increments then add the yoghurt and vanilla extract and mix until smooth.
Assemble lunchbox with lamb koftas, beets & raspberry muffins, blueberry yoghurt dip, brown rice cake halves, whole strawberries and cucumber half moons.
