Ingredients

  • 1 zucchini, grated
  • 1-2x 25g Nourishing Bubs Zucchini cubes
  • 1 egg
  • ½ cup shredded mozzarella
  • ¾ cup wholemeal flour
  • Greek yoghurt
  • Strawberry puree
  • Banana

Directions

  1. Drain out the excess moisture from the grated zucchini by wrapping in a cheesecloth or multiple layers of paper towel and squeezing the liquid out.
  2. Add all ingredients to a large bowl and mix until well combined.
  3. Heat a drizzle of extra virgin olive oil in a medium sized pan over medium heat. Using a tablespoon, spoon out zucchini fritters to your preferred size and use the back of the spoon to flatten them slightly.
  4. Cook on both sides for 2-3 mins on each side, until golden brown.
  5. Allow to cool before serving.
  6. Greek yogurt and strawberry puree mixed together plus sliced banana on the side.
