Ingredients
- 1 zucchini, grated
- 1-2x 25g Nourishing Bubs Zucchini cubes
- 1 egg
- ½ cup shredded mozzarella
- ¾ cup wholemeal flour
- Greek yoghurt
- Strawberry puree
- Banana
Directions
- Drain out the excess moisture from the grated zucchini by wrapping in a cheesecloth or multiple layers of paper towel and squeezing the liquid out.
- Add all ingredients to a large bowl and mix until well combined.
- Heat a drizzle of extra virgin olive oil in a medium sized pan over medium heat. Using a tablespoon, spoon out zucchini fritters to your preferred size and use the back of the spoon to flatten them slightly.
- Cook on both sides for 2-3 mins on each side, until golden brown.
- Allow to cool before serving.
- Greek yogurt and strawberry puree mixed together plus sliced banana on the side.
