Ingredients
- 3 x 25g Nourishing Bubs Blackberry Puree Cubes
- 2 medium bananas
- 2 eggs
- 3 tbsp Greek yoghurt
- 1 cup wholemeal flour
- 1 tsp baking powder
- ½ tsp ground cinnamon
- 3 tbsp Nourishing Bubs Tree Nut Maintenance Mix
- Optional topping: Natural yoghurt and a sprinkle of tree nut maintenance mix powder
Directions
- Preheat the oven to 190°C.
- Microwave blackberry cubes in 30 second increments.
- Mash the bananas with a fork.
- Beat eggs.
- In a bowl, mix all the wet ingredients (blackberry puree, bananas, eggs and yoghurt) until there are no lumps.
- In a separate bowl, mix the dry ingredients (flour, baking powder, cinnamon and tree nut maintenance mix).
- Mix the wet and dry ingredients together.
- Place mixture into cupcake baking moulds and bake for approximately 20 minutes until risen and golden.
- Cool 5 mins on a wire rack.
- Optional: Frost cupcakes with yoghurt and sprinkle with tree nut maintenance mix powder.
