What’s better than pancakes on a Sunday morning?! If you love meal prep or just an easy weekend breakfast  these big batch customizable pancakes are perfect for you! Nourishing Bubs Fruit Purees add that extra kick of flavor and boost of nourishment to each and every pancake. Serves: 20 pancakes

Base Pancake Mix Ingredients:


* 1.75 cups rolled oats
* 1 egg or 1 flaxseed egg
* 1.5 tablespoons coconut oil
* 1-2 tablespoons maple syrup (optional)
* 1/2 cup plant-based milk
* 1 teaspoon baking soda
* 1 teaspoon alcohol-free vanilla essence


For Banana and Strawberry Pancakes:


* 2 cubes of @nourishingbubs strawberry puree
* 1 ripe banana, chopped

 

For Apple Nut Pancakes:


* 2 cubes of @nourishingbubs apple puree
* 1-2 tablespoons of @nourishingbubs Tree Nut Maintenance Mix



For Blueberry Pancakes:


* 1 cup blueberries


Instructions:


1. In a blender or food processor, blend the rolled oats until they form a fine flour-like consistency.
2. In a large mixing bowl, combine the oat flour, egg or flaxseed egg, coconut oil, maple syrup (if using), plant-based milk, baking soda, and vanilla essence. Mix until well combined.
3. Divide the pancake batter evenly into three separate bowls and create your flavours!
4. Heat a non-stick skillet or griddle over medium heat and lightly grease with coconut oil.

5. Pour 1/4 cup of batter onto the skillet for each pancake.
6. Cook until bubbles form on the surface of the pancakes, then flip and cook until golden brown on the other side.
7. Repeat with the remaining batter, cooking each flavor separately.
8. Serve the pancakes warm and enjoy customizing with your toddler’s favorite flavors!
