These Beetroot Beef Fritters are a colourful, flavour-packed meal or snack that's perfect for little hands and growing appetites. Crispy on the outside and soft on the inside, they're made with nourishing beetroot, grass-fed beef and creamy ricotta to create a delicious finger food that's ideal for babies, toddlers and the whole family. Pair them with a creamy garlic yoghurt dip for an extra boost of flavour and nutrition.

Grass-fed beef is naturally rich in high-quality protein, iron and zinc, three key nutrients that support healthy growth, brain development and immune function. Beetroot provides fibre, vitamin C and antioxidants, essential for healthy digestion, keeping those sniffles away and maintaining healthy little cells. Eggs add protein and healthy fats, which are important for muscle growth and brain development.

Ricotta and Greek yoghurt provide calcium and protein to support strong bones, teeth and growing muscles, while fresh parsley adds natural flavour without relying on salt.

Ingredients

  • 2 x 25g Nourishing Bubs Beetroot Puree Cubes
  • 2 x 30g Nourishing Bubs Grass-Fed Beef Puree Cubes
  • 2 eggs
  • 2 tbsp parsley (or basil), chopped
  • 1 cup of flour of choice
  • 1 tsp baking powder
  • ⅓ cup ricotta cheese
  • Extra-virgin olive oil to fry fritters
  • Optional: garlic sauce or tomato sauce to serve
  • 1/2 cup plain Greek yoghurt
  • 1/2 tbsp extra-virgin olive oil
  • A squeeze of lemon juice
  • ½ tsp garlic powder

Directions

  1. Microwave beetroot and beef cubes in 30 second increments.
  2. Whisk eggs.
  3. To a bowl, add beetroot, beef, eggs, parsley and mix. 
  4. Add the flour, baking powder and ricotta cheese to the mixture and stir.
  5. On a pan over medium heat, add a bit of olive oil and take a heaped tablespoon of the mixture to make small circular fritters. Flatten slightly. Cook for 2-3 min on each side, or until golden brown and crispy. 
  6. To make garlic sauce, stir together the yoghurt, olive oil, lemon juice and garlic powder.
