Ingredients
- 2 x 25g Nourishing Bubs Beetroot Puree Cubes
- 2 x 30g Nourishing Bubs Grass-Fed Beef Puree Cubes
- 2 eggs
- 2 tbsp parsley (or basil), chopped
- 1 cup of flour of choice
- 1 tsp baking powder
- ⅓ cup ricotta cheese
- Extra-virgin olive oil to fry fritters
- Optional: garlic sauce or tomato sauce to serve
- 1/2 cup plain Greek yoghurt
- 1/2 tbsp extra-virgin olive oil
- A squeeze of lemon juice
- ½ tsp garlic powder
Directions
- Microwave beetroot and beef cubes in 30 second increments.
- Whisk eggs.
- To a bowl, add beetroot, beef, eggs, parsley and mix.
- Add the flour, baking powder and ricotta cheese to the mixture and stir.
- On a pan over medium heat, add a bit of olive oil and take a heaped tablespoon of the mixture to make small circular fritters. Flatten slightly. Cook for 2-3 min on each side, or until golden brown and crispy.
- To make garlic sauce, stir together the yoghurt, olive oil, lemon juice and garlic powder.
