Tree Nut Stir-fry
This stir fry features zucchini, capsicum, mushrooms, and tofu, stir-fried with udon noodles and a peanut butter soy sauce, making it a nutritious and baby/toddler friendly meal while maintaining tree nut allergen exposure using our Tree Nut Maintenance Mix.

Ingredients
- 2 tbsp extra virgin olive oil
- ½ brown onion, diced
- 1 zucchini
- 4 mushrooms
- 1 small capsicum
- 200g firm tofu
- 440g udon noodles
- 3 tbsp soy sauce (salt reduced)
- 1 tbsp smooth peanut butter
- ½ tsp sesame oil
- 1 tbsp honey (if bub is 12 months or older)
- ⅓ cup water
- 1 tsp Nourishing Bubs Tree Nut Maintenance Mix
Directions
- In a large pan or wok, heat the olive oil over medium heat. Fry the onion until slightly translucent.
- Add the vegetables and stir fry for 2-3 minutes, before adding the tofu. Continue to stir fry until vegetables begin to soften.
- In the meantime, make the sauce by combining the soy sauce, peanut butter, sesame oil, honey (if bub is over 12 months) and water. Add more water depending on how thin/diluted you prefer.
