Ingredients

  • 3-4 overripe bananas
  • 2 eggs
  • ⅔ cup extra virgin olive oil
  • 2 cups wholemeal flour
  • 2 tbsp Nourishing Bubs Tree Nut Maintenance Mix
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp ground ginger

Directions

  1. Preheat the oven to 180°C and line a loaf tin with baking paper.
  2. In a large bowl, mash the bananas with a fork. Add in eggs and oil and stir together.
  3. Add in dry ingredients and stir to combine until no flour streak left.
  4. Pour batter into tin and evenly spread the top. Bake for roughly 40-45 mins, until golden and a toothpick comes out clean when inserted in the middle
  5. Cool in tin for 5 mins, then transfer to a wired rack to cool.
