This quick and healthy tortilla omelette wrap, packed with eggs, tomatoes, and mozzarella, provides a balanced meal that's easy to prepare for baby led weaning and toddlers.
2 eggs
~50ml milk of choice
½ tomato, diced
~30g shredded mozzarella
1 wholegrain tortilla wrap
In a bowl, beat eggs and milk together.
Heat olive oil over low heat in a non-stick fry pan. Add eggs and swirl the pan to ensure the egg is evenly distributed around the base of the pan.
Evenly distribute the tomato and cheese over the omelette. Place the tortilla wrap over the omelette so it sticks to the uncooked egg. Cook for a further 30 seconds.
Carefully run a flat spatula to lift the edges of the omelette and quickly flip. Cook for a further minute, until the tortilla wrap is slightly crisp. Using the spatula again, fold the tortilla in half and press down. Remove from heat.
Cut into thick strips and cool slightly before serving.
Suitable once bub has been introduced to egg, dairy and wheat.
