This quick and healthy tortilla omelette wrap, packed with eggs, tomatoes, and mozzarella, provides a balanced meal that's easy to prepare for baby led weaning and toddlers.

Ingredients
- 2 eggs
- ~50ml milk of choice
- ½ tomato, diced
- ~30g shredded mozzarella
- 1 wholegrain tortilla wrap
Directions
- In a bowl, beat eggs and milk together.
- Heat olive oil over low heat in a non-stick fry pan. Add eggs and swirl the pan to ensure the egg is evenly distributed around the base of the pan.
- Evenly distribute the tomato and cheese over the omelette. Place the tortilla wrap over the omelette so it sticks to the uncooked egg. Cook for a further 30 seconds.
- Carefully run a flat spatula to lift the edges of the omelette and quickly flip. Cook for a further minute, until the tortilla wrap is slightly crisp. Using the spatula again, fold the tortilla in half and press down. Remove from heat.
- Cut into thick strips and cool slightly before serving.
