Ingredients
- 3 x Nourishing Bubs Beef Meatballs
- Handful of wholemeal spaghetti
- 1 tbsp extra virgin olive oil
- 1 tsp minced garlic
- 1/2 onion, finely diced
- 400g peeled canned tomatoes
- 2 x 15g Nourishing Bubs Capsicum Cubes
- 2 x 15g Nourishing Bubs Carrot Puree Cubes
- 2 x 15g Nourishing Bubs Zucchini Puree Cubes
- 2 x 30g Nourishing Bubs Legume Puree Cubes
- 1 tsp dried Italian herb mix
- Cucumber cut in half lengthwise (sticks)
- Sprinkle of shredded parmesan cheese
Directions
- Preheat the oven to 180°C and line a baking tray with a baking sheet.
- Place the beef meatballs in the oven and bake for 10 mins.
- On a pot, bring water to a boil, add the spaghetti and cook for approximately 10 mins. Drain pasta.
- Heat olive oil on a pan over medium heat. Add garlic and onion. Cook for 3-5 mins until the onion is transparent.
- Add the canned tomatoes as well as the capsicum, carrot, zucchini and legume puree cubes to the pan. Bring to the boil to ensure all puree blocks are defrosted and the sauce has a smooth texture then lower the heat to low, add Italian herb mix and simmer for 10 mins.
- Chop spaghetti, mix with the pasta sauce and sprinkle with parmesan cheese.
- Assemble bub’s plate with spaghetti, beef meatballs and cucumber sticks.
