Ingredients
- 2 tbsp extra virgin olive oil
- ½ brown onion, diced
- 2 garlic cloves, minced
- 1 cup dried red lentils
- 1x 400g can diced tomatoes
- 1x 400ml lite coconut milk
- ½ tsp smoked paprika
- ½ tsp turmeric
- ½ tsp ground cumin
- 1 tsp pepper
- 3x 25g Nourishing Bubs Pumpkin cubes
- 2x 25g Nourishing Bubs Carrot cubes
- 2x 25g Nourishing Bubs Sweet Potato cubes
- 1x 25g Nourishing Bubs Cauliflower cubes
- 1x 25g Nourishing Bubs Parsnip cubes
- 1 ½ cup water
- 3 tbsp natural greek yoghurt
Directions
- Add the olive oil to a pot over medium heat. Add the onion and garlic and cook until fragrant and onion is slightly softened, stirring occasionally.
- Add the red lentils, diced tomatoes, coconut milk and spices, and stir to incorporate the spices. Add the Nourishing Bubs vegetable cubes and cover with water.
- Cover with a lid and bring to a simmer for 25-30 mins, stirring occasionally. The lentils should be soft and the sauce should thicken.
- Remove off heat and stir through the greek yoghurt to make the curry creamy.
- Serve with rice or naan, and vegetables.
