Ingredients
- 3 x Nourishing Bubs Beef Meatballs Finger Food
- 2 x Nourishing Bubs Zucchini & Currant Muffins Finger Food
- ½ carrot, peeled
- Cherry tomatoes
- ½ orange
- ½ ripe avocado
- 1 tbsp Greek plain yoghurt
- ¼ tsp minced garlic
- A squeeze of lemon
Directions
- Preheat the oven to 180°C and line a baking tray with a baking sheet.
- Bake beef meatballs and zucchini & currant muffins in the oven for 10 mins.
- Cut the carrot into thin sticks by quartering it lengthwise.
- Cut cherry tomatoes in quarters.
- Cut orange into large wedges removing the seeds but leaving on the peel.
- To make the avocado dip, mash the avocado with a fork and then add the yoghurt, minced garlic and lemon and mix until smooth.
- Assemble lunchbox with beef meatballs, zucchini & currant muffins, avocado dip, carrot sticks, quartered cherry tomatoes and orange wedges.
