These fluffy Mango Mini Pancakes are a fun and nourishing breakfast that little hands will love to pick up and enjoy! Bursting with the natural sweetness of mango, they’re soft, golden, and perfectly sized for bubs learning to self-feed.

Mango is an excellent source of vitamin C, which helps to support bub’s immune system, as well as a rich source of vitamin A, which is important for healthy little eyes and skin. Paired with egg for protein and iron, and milk for calcium and bone development, these pancakes make a balanced and delicious way to start bub’s day.

For extra texture (and to make fruit pieces easier to grip), serve with bite-sized mango chunks rolled in coconut – a clever way to add healthy fats and fiber too.

These mango mini pancakes are perfect from 9 months onwards, they’re a versatile, wholesome treat that both parents and bub can enjoy together. They’re also freezer-friendly, making them a handy snack or breakfast option for busy families.

Ingredients

6 x 25g Nourishing Bubs Mango Puree Cubes
1 egg
¾ cup milk of choice
1 tsp vanilla extract (with no alcohol)
1 ¼ cups flour of choice
2 tsp baking powder
olive oil to fry pancakes
optional: bite-sized mango pieces to serve, coated with grated coconut to make them less slippery

Directions

Microwave mango cubes in 30 second increments.
To a bowl, add mango, egg, milk, vanilla extract and whisk.
Add the flour and baking powder to the mixture and stir.
On a pan over medium heat, add a bit of olive oil and pour in the pancake batter to make small circular pancakes. When you start seeing bubbles, flip over the pancake and cook until golden brown.
Optional: Cut mango into bite sized pieces and coat in grated coconut. Serve alongside pancakes.

This recipe is suitable from 9 months old once bub has developed their pincer grasp.
Suitable only after egg and dairy (if using cow’s milk) have successfully been introduced into bub’s diet.
Suitable only after wheat (if using wheat flour/milk), almond (if using almond flour/milk), oat (if using oat flour/milk) or whichever nut/allergen the flour and milk of your choice contain, have successfully been introduced into bub’s diet.
To add variety, swap for a different Nourishing Bubs Fruit Puree cube (e.g. blueberry, strawberry).
You can store pancakes in the fridge for a couple of days or in the freezer for up to 2 months (place baking paper squares between pancakes to stop them from sticking together in the freezer).
