Ingredients
- 2x 25g Nourishing Bubs Apple cubes, defrosted
- 1 egg
- ½ cup milk
- 1 carrot, shredded and liquid drained (*press into paper towel)
- ¾ cup wholemeal flour
- 1 tsp baking powder
- 1 tsp cinnamon
- ½ tsp nutmeg
- 1 tbsp Nourishing Bubs Tree Nut Maintenance Mix
- 80g cream cheese, softened
- Juice of ½ lemon
Directions
- Preheat oven to 180° and line a muffin tray.
- In a large bowl, mix together the Nourishing Bubs apple cubes, egg, milk and oil.
- Fold in the shredded carrot.
- Add the flour, baking powder, cinnamon, nutmeg and Nourishing Bubs Tree Nut Maintenance Mix, and mix until just combined.
- Scoop batter into prepared muffin tins, filling about 3/4 of the way. Bake for 15-18 mins until muffins are golden brown and spring back to the touch
- Remove the muffins from the oven and let them cool completely.
- To make the cream cheese frosting, stir the lemon juice through the softened cream cheese until soft and spreadable. Spread over each muffin and top with a sprinkle of Nourishing Bubs Tree Nut Maintenance Mix (optional).
