Ingredients
- 1 broccoli
- 1 cup baby spinach
- ½ cup frozen peas
- 1 tsp nutmeg
- ½ tsp pepper
- 300mL thickened cream
- 2 cups shredded tasty cheese
- ½ cup grated parmesan
- 250g macaroni
Directions
- Chop broccoli, including stem, into large pieces. Boil in a medium saucepan with peas, until softened and tender. Remove from heat and drain
- Cook macaroni per packet instructions and drain.
- When broccoli is slightly cooled, cut into smaller pieces. Place half of the heads and all of the stems in a blender with the peas, spinach, nutmeg, pepper and cream. Blend until smooth and vibrant green.
- Place broccoli sauce mixture in a large saucepan over low heat and bring to a simmer. Gradually add in the tasty cheese and parmesan and continually stir to thicken the sauce. Stir in the pasta to ensure all is coated.
- In a separate frying pan, place the remaining small florets of broccoli head with a drizzle of extra virgin olive oil. Cook florets until slightly charred.
- Divide pasta mixture and serve with charred broccoli.
