Ingredients

  • 2 eggs
  • ½ tbsp extra virgin olive
  • ½ cup baby spinach, chopped
  • ⅓ cup shredded mozzarella

Directions

  1. Whisk together the eggs in a small bowl
  2. Heat the olive oil in a small pan over low heat. Add the spinach and wilt down.
  3. Add the eggs and spread evenly across the pan. Cook for 2-3 mins until partially set and evenly sprinkle the shredded mozzarella over.
  4. Flip with a spatula and cook for another 2-3 mins until egg is fully cooked.
  5. Remove from heat and cut into thick strips.
