Ingredients
- 2 eggs
- ½ tbsp extra virgin olive
- ½ cup baby spinach, chopped
- ⅓ cup shredded mozzarella
Directions
- Whisk together the eggs in a small bowl
- Heat the olive oil in a small pan over low heat. Add the spinach and wilt down.
- Add the eggs and spread evenly across the pan. Cook for 2-3 mins until partially set and evenly sprinkle the shredded mozzarella over.
- Flip with a spatula and cook for another 2-3 mins until egg is fully cooked.
- Remove from heat and cut into thick strips.
