This stir fry features zucchini, capsicum, mushrooms, and tofu, stir-fried with udon noodles and a peanut butter soy sauce, making it a nutritious and baby/toddler friendly meal while maintaining tree nut allergen exposure using our Tree Nut Maintenance Mix.

Ingredients
2 tbsp extra virgin olive oil
½ brown onion, diced
1 zucchini
4 mushrooms
1 small capsicum
200g firm tofu
440g udon noodles
3 tbsp soy sauce (salt reduced)
1 tbsp smooth peanut butter
½ tsp sesame oil
1 tbsp honey (if bub is 12 months or older)
⅓ cup water
1 tsp Nourishing Bubs Tree Nut Maintenance Mix
Directions
In a large pan or wok, heat the olive oil over medium heat. Fry the onion until slightly translucent.
Add the vegetables and stir fry for 2-3 minutes, before adding the tofu. Continue to stir fry until vegetables begin to soften.
In the meantime, make the sauce by combining the soy sauce, peanut butter, sesame oil, honey (if bub is over 12 months) and water. Add more water depending on how thin/diluted you prefer.
