When it comes to kids, it seems like an endless eating marathon – moving from one meal to the next with several snacks in between! It can be overwhelming to mix up the options each day, not to mention coming up with ideas on how to get those vegetables in, which is not always such an easy task. This yummy beet hummus is the perfect addition to your snack repertoire and can be served with an assortment of vegetables, crackers, cheese or even as an accompaniment to a meal. The beetroot adds a beautiful pink hue while giving a boost of antioxidants and the chickpeas provide a great plant source of protein.

4 x 25g Nourishing Bubs Beetroot, defrosted
1 x 400g tin Chickpeas, rinsed
1 x heaped tbsp tahini
1-2 garlic cloves, crushed
1 tbsp Apple Cider Vinegar
Juice 1/2 a lemon
2 tbsp Extra Virgin Olive Oil
1/2 tsp cumin (optional)
Place all ingredients (except olive oil) into a food processor and blend until smooth.
While motor is running, gradually add olive oil.
Scrape down sides of food processor. Serve with chopped vegetables and crackers.
