1 cup rolled oats
6 x blocks Nourishing Bubs Pumpkin, defrosted (150g or ~1/2 cup)
1 tsp ground ginger
1 tsp ground cinnamon
1/3 cup desiccated coconut
5 dates, softened in hot water & chopped
2 tbsp coconut oil
Place all ingredients in food processor and process until well combined.
Refrigerate mixture for 30 minutes – 1 hour to allow to firm up.
Roll teaspoon portions of mixture into small balls.
Place on lined tray or in container.
Keep refrigerated for 3 days or frozen up to 3 months.
