Cauliflower & Parmesan Fritters


1 x 300g bag Nourishing Bubs Cauliflower, defrosted
4 eggs
1C wholemeal / spelt flour
1C freshly grated, lightly packed parmesan cheese
4 finely chopped shallots (option, depending on tolerance of 'green stuff')
1 tsp turmeric
pinch of salt
Extra virgin olive oil, for cooking


  1. Combine all ingredients, except olive oil and parmesan cheese in medium bowl. Mix to combine then stir in parmesan cheese.
  2. Heat large saucepan to medium heat and add 1 tbsp olive oil, swirling to cover the pan.
  3. Add tablespoon amounts of mixture to the pan, trying to fit 3-4 each batch if you can (without putting too close together that they merge).
  4. Cook for 2-3 minutes each side, until lightly browned.
  5. Repeat with remaining mixture.
